Pork Tenderloin with Sweet and Spicy Rub 0 Picture

Ingredients

  • 1 C dark brown sugar, packed
  • 1/4 C smoky paprika
  • 1/4 C fine sea salt
  • 2 Tbsp fresh cracked peppercorns
  • 1 Tbsp cayenne pepper
  • 1 Tbsp dry mustard
  • 2 Tbsp garlic powder
  • 2 whole pork tenderloins

Step 1

Preheat oven to 325 deg. With a whisk, mix all spices in a large bowl.

Pour 1/2 cup of this rub mix into a large zip-top bag; place pork tenderloins in the bag. Add another 1/2 cup rub mix on top of pork, then shake to combine, making sure to cover the pork with rub mix completely.

To allow the spice flavors to penetrate the meat, place the plastic bag in the refrigerator and allow it to sit for at least 1 hour, or overnight.

When you're ready to cook, use cooking spray to coat a roasting pan's invert rack.

Place the tenderloins onto the roasting rack.

Slow roast the pork in the oven for about 25 to 30 minutes, or until the meat's internal temperature reaches 140 deg. If you don't have a meat thermometer, cook only until the loin feels firm and springs back when pressed with your finger, and the juices run clear when the pork is poked with a knife.

Remove from oven and allow to rest for 15 minutes before slicing. Serve.
