Ingredients
- 7 oz chocolate wafer cookies
- 6 tbsp butter, melted plus 4 tbsp
- 10 oz bittersweet chocolate, chopped
- 2 1/2 c. mini marshmallows
- 1 1/2 c. plus 1 1/2 c. heavy cream
- 1/4 c. powdered sugar
- 2 tbsp cocoa powder

Preparation
Step 1
Put the cookies into a food processor and pulse until finely chopped. Transfer into a bowl and pour 6 tbsp melted butter in the bowl. combine until all the cookie crumbs are moistened. Press into the bottom and up the sides of a pie plate.
In a saucepan, bring 1/3 c. water to a boil. Reduce heat to low and stir in the chocolate, marshmallows and remaining 4 tbsp butter until melted. Transfer to a large bowl.
With a mixer, beat 1 1/2 c. of the cream in a separate bowl until stiff peaks form. Fold the cream into the chocolate mixture. Transfer to the prepared pie dish, spreading evenly. Chill for 1 hour until firm.
Prior to serving, whip the remaining 1 1/2 c. cream with the powdered sugar and cocoa until stiff. Spoon over mousse and refrigerate 1 hour.
