Ingredients
- 1/2 gallon skim milk (2% or whole milk for richness but more fat)
- 1/2 cup rice (soaked in water for 1 hour)
- Sugar to taste (start with 1/2 cup)
- 1/2 cup chopped almonds or pistachios or 1/4 cup of each
- 1/4 cup raisins
- 1/2 teaspoon ground cardamom or seeds from green cardamom (may add more according to taste)

Preparation
Step 1
Bring milk to a boil.
Add rice.
Lower heat and cook until the rice is tender and the milk is creamy (about 1 hour)
Check often to insure it is not burning.
Add the sugar, nuts, raisins and cardamom.
cook another 5 minutes
Serve hot or cold
