Ingredients

  • 2 tbsp. oil
  • 2 lbs. beef chuck or stew meat
  • 1 large onion, diced
  • 1/2 tsp. salt
  • 3 garlic cloves, minced
  • 3 tbsp. tomato paste
  • 2 tsp. dried thyme
  • 1 tsp. ground cumin
  • 1/2 tsp. ground allspice
  • 1/4 tsp. cayenne pepper
  • 3 cups beef broth
  • 1 cup spelt
  • 1 tbsp. worcestershire
  • 1 -2 sweet potatoes, cubed
  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 cup chopped parsley

Step 1

Heat oil in a large saucepan over medium high heat. Add beef and cook until browned all over. Remove beef from pan and set aside.

Reduce heat to medium. Add onion and salt to pan and heat until softened, about 5 minutes. Add garlic, tomato paste, thyme, cumin, allspice and cayenne and heat one minute, stirring and scraping up any bits. Add broth, 2 cups of water, beef, spelt and worcestershire sauce. bring to a boil, reduce heat to medium and simmer for a few hours until meat is almost falling apart. Add potato, celery and carrots and continue simmering about another 1/2 hour. Garnish with parlsey.
