Zesty Chile-Lime Vinaigrette

This dressing straddles East and West. It's zippy, fresh flavor is great for a wide range of salads, from mixed lettuces to grated beets and carrots.

Ingredients
- Zest of 2 (3 oz) limes
- Juice of the limes, with rice vinegar added to equal 1/4 cup
- 1-1/2 Tbl granulated sugar or honey
- 1-1/2 Tbl soy sauce
- 1-1/2 Tbl canola or grapeseed oil
- kosher salt, to taste
- black pepper, to taste
- 1/2 seeded and finely chopped large red Fresno chile or jalapeno

Preparation
Step 1
Mix all but chile, salt and pepper in small bowl, stir until sugar dissolves.
Season with salt and pepper to create a balanced, savory-tangy note (usually egin with 1/4 tsp salt and 1/8 tsp pepper. Stir in chile, let stand 5-10 minutes.
Make ahead - refrigerate in airtight container up to 5 days.
Makes 1/2 cup.
