Ingredients

  • 1 Onion, chopped fine
  • 1/4 Cup butter
  • 2 Teaspoons salt
  • 1/2 Teaspoon pepper
  • 2 Teaspoons curry powder
  • 1 Teaspoon lemon juice
  • 1 Hard boiled eggs
  • 2 Cups cooked kidney beans, drained
  • 2 Cups cooked potatoes, diced
  • 1 Cup sour cream

Preparation

Step 1

Brown onion in butter.
Add salt, pepper, curry powder and lemon juice.
Cook about 5 minutes.
Chop whites of hard boiled eggs and add to the first mixture.
Add kidney beans, potatoes and sour cream, heat slowly.
Place in serving dish and garnish with sieved egg yokes.
