Ingredients

  • 1 cup brown sugar, firmly packed
  • 1/4 cup unsalted butter
  • 1 egg
  • 1 1/8 cups quick-cooking oats
  • 1 cup buttermilk
  • 1 Tbsp vanilla
  • 1 cup flour
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup finely chopped walnuts
  • 1 1/3 cup fresh blueberries

Preparation

Step 1

1. Preheat oven to 400 degrees.
2. Grease 18 large muffin cups with butter
3. In mixing bowl, cream brown sugar and butter.
4. Add egg; beat well
5. Stir in oats, buttermilk, and vanilla.
6. In large mixing bowl, mix flour, baking poweder, salt, cinnamon, baking soda, nutmeg, and walnuts.
7. Combine flour and butter mixtures; stir until just moistened.
8. Gently fold in blueberries.
9. Fill muffin tins 2/3 full.
10. Bake 15-20 min or til lighttly browned
11. Cool 5 minutes before removing from tins.
