Caramel Pecan Brownies

Ingredients
- 8 oz bittersweet chocolate, chopped
- 3/4 c. butter
- 2 c. plus 1 1/2 c. sugar
- 6 large eggs
- 2 c. flour
- 1 tsp salt
- 2 c. semisweet chocolate chips
- 6 tbsp water
- 1/2 c. heavy cream
- 3 c. toasted pecans, chopped

Preparation
Step 1
Heat oven to 350 degrees. Grease an 8 in square baking dish.
in a small saucepan, melt the chocolate and butter over medium heat. Remove from heat, transfer to a large bowl and whisk in 2 c. sugar, then the eggs. Stir in the flour and the salt. Fold in the chocolate chips.
Spread the batter into the greased dish. Bake until set, about 25-30 minutes. Let cool completely.
To make the topping:
In a medium saucepan, combine the remaining 3/4 c. sugar and water. Heat over medium heat (do not stir). Swirl the pan occasionally until the sugar has dissolved. Increase the heat and boil until the sugar is a deep caramel color (do not stir). Immediately remove from heat and stir in the heavy cream (it will bubble), then the pecans.
Pour the mixture evenly over the brownies.
Cut into squares.
