Ingredients

  • 4 unpeeled, chopped fresh Zucchini
  • 3 large shallots. chopped
  • 4 large cloves garlic, minced (I usually mince and mix shallots and garlic together)
  • 1/2# sliced dark brown cremini mushrooms
  • 3 Tablespoons olive oil
  • 32 oz.whole milk ricotta
  • 20 oz. thawed frozen spinach with all water squeezed out
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 32 oz. shredded mozzarella
  • (2) 25 oz. jars of meatless marinara
  • 6-9 cooked lasagne noodles

Preparation

Step 1

Preheat oven to 400 degrees. Place rack in middle position.
Heat skillet over medium-high heat. Add the olive oil. Cook mushrooms with shallots & garlic. Add Zucchini and cook for 7 minutes until softened. Remove from heat and set aside.
In a medium-size mixing bowl, combine ricotta, egg, spinach, salt, and pepper.
Assemble layers in a 9 x 13 baking dish:
Marinara, a layer of noodles, spinach-ricotta mixture, zucchini/onion mixture, mozzarella cheese.
Repeat. Finishing layer should be noodles, marinara, shredded mozz. Cover with foil.
Bake on parchment lined baking sheet for one hour covered; then 15 minutes uncovered.
Let sit for 10 minutes before serving.
