Shrimp Quesadillas with Pepitas

Ingredients
- 1/3 c. raw, unsalted green pepitas
- 1 tsp minced fresh marjoram
- 2 garlic cloves, minced
- 3 - 5 TB vegetable oil
- 3/4 - 1 lb medium shrimp, raw, shelled and deveined
- S & P to taste
- 4 large flour tortillas
- 8 - 10 oz queso fresco, crumbled
- Green chile or tomatillo salsa

Step 1
Toast pepitas in cast iron skilled over medium low heat until they start poppint. Shake pan and watch closely. Remove and set aside.
Combine marjoram and garlic.
Heat 1 TB oil in cast iron ckillet and add garlic/parsley. Add shrimp. Toss until cooked through about 2 - 3 minutes. Season with s & p. Remove shrimp and garlic bits; set aside.
In additional skillet, add 1 - 2 TB oil over medium heat. Fold tortillas loosely in half and fit 2 into skillet, folds adjacent. Fry for a few minutes until toasty; turn and fry until toasty on other side.
Fill each tortillas with cheese and cook until just melted, leaving top half of tortilla loose. Remove pan from heat and stuff with shrimp and pepitas.
Cut into 6 wedges and serve with salsa.
