Oven Fries

Ingredients
- 3 medium russet potatoes, scrubbed
- 1 t kosher salt
- 1/2 t freshly ground pepper
- 1 1/2 t smoked paprika
- 1/4 t ground cumin
- 1 pinch cayenne pepper
- 2 T extra-virgin olive oil

Preparation
Step 1
Preheat oven to 425 degrees
Line 2 large baking sheets with parchment paper
Spray the parchment paper with cooking spray
Slice the potatoes lengthwise into 1/4 inch planks
Pat the planks dry with paper towels then slice lengthwise into 1/4 inch fries (like McDonalds size fries)
Pat the fries dry a second time and place in a large bowl
Combine the spices in a small bowl
Drizzle the fries with olive oil and sprinkle the fries with half of the spice mixture.
Toss to coat
Arrange the fries on the baking sheets in an even layer, making sure there is a little space between each fry
Bake for 15 minutes
Remove fries from the oven and carefully flip them over with a spatula
Return to the oven and bake 10-15 minutes more until browned and crisp
(Keep a close eye at the end - they go from browned to burned very quickly)
Remove from oven and sprinkle fries with remaining spice mixture and toss to coat
Serve immediately
