Pretzel Chicken w/ Mustard Cheddar Sauce

Ingredients
- Sauce:
- 2 chicken breasts
- 6 oz salted pretzels
- 1/2 tsp black pepper
- 2 eggs
- 1/2 cup canola oil (for frying)
- 1 TBS butter
- 1 TBS all-purpose flour
- 1 cup milk
- 1 TBS spicy mustard
- 2 cups shredded cheddar

Preparation
Step 1
Cut chicken breasts in half. Pound each half to 1/4" thickness.
Finely crush pretzels in a food processor. Pour into a pie pan.
Dip each chicken breast into crumbs, then egg, then crumbs.
Heat canola oil in a large saute pan. Fry each chicken piece 3-4 minutes on each side, until golden and chicken is cooked throughout.
Melt butter in a medium saucepan. Whisk in flour. Cook for 1 minute. Whisk in milk and mustard. Cook until slightly thickened. Stir in cheese.
Serve over chicken.
