Ingredients

  • 8 medium sized vidalia onions, peeled and sliced 1/4 inch thick
  • 2 Tbsp butter, or as needed
  • 1/2 c heavy cream
  • 1/4 c dry sherry
  • 1/8 tsp black pepper
  • 1/2 c Swiss cheese, shredded
  • 1/4 c grated Parmesan or Romano cheese

Preparation

Step 1

Preheat oven to 375. Saute half of onions in 2 Tbsp butter and 1/4 tsp salt in large frying pan over low heat, stirring occasionally. Cook only till limp, 5 to 10 minutes; do not brown. Place onions in a 1 1/2 quart baking dish with slotted spoon. Saute remaining onions in additional butter and an additional 1/4 tsp salt in the same method as above. Once all onions have been added to baking dish, add cream, sherry and pepper. Stir to combine. Top with Swiss and Parmesan cheese. Bake until top is a bit brown and all is bubbling hot, about 15 to 20 minutes.
