Ingredients

  • Laura Bush's Texas Governor's Mansion Cowboy Cookies
  • Yield: enough cookies to feed most of the Lone Star State
  • 3 cups flour
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1 1/2 cups butter, at room temperature
  • 1 1/2 cups sugar
  • 1 1/2 cups brown sugar
  • 3 eggs
  • 1 tbsp vanilla
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups chopped pecans (8 oz)

Preparation

Step 1

Preheat oven to 350ºF.

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

In a second bowl, beat the butter on medium speed until smooth. Add the sugar and brown sugar and beat for another 2 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla.

Stir in the flour mixture, blending until just combined. Add the chips, oats,and pecans and stir until fully incorporated.

I make oatmeal choc chip all the time and sometimes I use old fashioned other times I use quick. Just depends on what I have in the pantry. Most probably wont tell any difference, I personally think the old fashioned stay a little less mushy and more chewy!

I've been making these for several years, too! My family won't let me make any other cookie. I'm known for them at potlucks, baseball games, bake sales, etc...my only modification is that instead of 3 cups chocolate chips, I use 1 cup each of chocolate, white, and butterscotch. Hubby says butterscotch puts this one over the top, and I absolutely agree. Also, scoop them out with a 1/4 cup cookie scoop and freeze them in little pucks if you don't want to bake them up all at once. I like to have a bunch in the freezer to bake up in a pinch when last minute guests drop in. This really is the absolute best cookie ever!

When you freeze them, do you thaw them before baking ?? or just add more time to your baking ??

I can't wait to make these. However, I want to make sure that it's actually 1 1/2 cups of butter and not 1 1/2 sticks. I've never made cookies using so much butter. LOL

I made these but it was inpossible to add all the dry stuff with only butter, 3 eggs and 1 tbsp of vanilla for to make it moist enought to actually make a dough that will keep togheter. I added less oatmeal and less coconut... the result was still very taisy.

These are delicious!!!!!I didn't have any trouble mixing the dough...well my arm was tired, but it was doable and worth it.1

I did mine all in my KitchenAid mixer and skipped mixing by hand. They came out amazing all the same.

Just made these and they are yummy. I left out the nuts because the grand boys won't eat them. Made half with coconut while I LOVED. Not all the family will so made half without .... Needed to add more oatmeal so they would not flatten out to much. The cinnamon adds a special touch flavor wise.

Anything coming from such a fabulous First Lady as Laura Bush has to be great. She is the classiest First Lady this nation ever had. These cookies sound wonderful. My husband loves coconut and oat meal. Our anniversary and his birthday is this month. Solved my problem of what to make him.

My mom made a version of these when I was little and replaced the chocolate chips with M&M's. She called them 'Magic Cookies'. Just a fun idea. :)

Making these wonderful cookies as I write. I did not have enough chocolate chips on hand and decided to make half the batter with choco. Chips and the other large batch with raisins since my husband loves oatmeal raisins. Just had one of the chocolate chip and will say I am in love with the taste and chewy texture these cookies are. These will be the kind I will make from now on. Thanks to our lovely Barbara Bush for sharing. I know my husband will be very happy with the new variety when he gets home from work! : ))

I just made these but without the coconut (allergic) and minus the nuts (didn't have any) and they're so yummy!!! Going to be backing these often! It's such a huge recipe though, probably going to split and freeze in the future! Next time ill add raisins for my mom!

HELP! So, I made these and the taste was awesome!!! I never really LOVE a chocolate chip cookie, just settle...and these I LOVED!!! My only issue was how dry mine turned out. They didn't spread out on the pan and they were not chewy at all. Oh, even if you can't help me figure out what to do to make them moist, I will still make them again and enjoy every dry bite...lol!

This is a great recipe. I followed it exactly with the exception of adding a cup less chocolate chips. Everyone raved about them. *note: this recipe makes a large amount, indeed! I would not suggest using your Kitchen Aid stand mixer because the dough rises up the paddle...Perhaps use your hand mixer once you start adding all the dry ingredients. Happy Baking!

Let me just say... So thankful for my electric hand mixer. My small kitchen aid stand mixer just couldn't handle it. Can you imagine how those pioneer women made stuff before electricity!?! This is one recipe I would NOT be making!! Haha. These taste great raw (yes, I know that's a no-no), can't wait til they come out of oven! And as far as the "sticking" comment, I never bake cookies without parchment paper on an air-bake pan.

I've played around with this recipe and added so many different ingredients - never once did the recipe fail. Sometimes, I plop in a cup of peanut butter. I like to make these with dark chocolate and dried cranberries.

If cookies turn out flat and run, the baking powder or soda could be old. Also, melting butter will cause cookies to flaten. The sugars and butter need to be creamed well - the mixing adds air to the mixture. Butter room temp, not any warmer. Eggs and all ingredients should be room temp when baking.

YUM!!! Mixed half a batch up last night & made them this morning, turned out great, they are a flatter cookie tho. They are a cookie full of flavor, I used half butterscotch & half choc chip chips.

I didn't add salt and added craisins they are awesome.

I just got done making them! Yes, they did reach the top of my Kitchenaid paddle, but it was fine and all was mixed well. I used a large ice cream scoop. Yummy, yummy, yummy. Enough said.
