The Big Easy Cajun Gumbo

Ingredients
- 2 tablespoons all-purpose flour
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 4 garlic cloves minced
- 1/4 cup water
- 3/4 teaspoon hot pepper sauce
- 1 (14.5-ounce) can no-salt-added stewed tomatoes undrained
- 1 (10 1/2-ounce) can low-salt chicken broth
- 2 bay leaves
- 1/2 pound turkey kielbasa cut into 1/4-inch thick slices
- 1/2 pound medium shrimp peeled and deveined
- 1 (10-ounce) package frozen cut okra thawed
- 1 tablespoon filé powder
- 3 cups hot cooked rice
- Chopped fresh flat-leaf parsley optional

Step 1
Place flour in a saucepan. Cook over medium-high heat 7 minutes or until very brown; stir constantly with a whisk. (If flour browns too fast, remove from heat; stir constantly until it cools down.) Place browned flour in a small bowl.
Heat oil in saucepan over medium-high heat. Add onion, celery, bell pepper, and garlic; sauté 8 minutes or until tender. Sprinkle vegetables with browned flour; cook 1 minute, stirring constantly. Stir in water and next 4 ingredients (water through bay leaves). Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes. Add sausage; simmer, uncovered, 5 minutes. Add shrimp and okra; cover and simmer 5 minutes or until shrimp are done. Discard bay leaves. Stir in filé. Serve over rice. Sprinkle with parsley, if desired.
Serving Size: 1 cup gumbo and 1/2 cup rice
