Ingredients
- crust:
- 2 cups soft Almond Macaroon cookie crumbs
- 1/4 cup sugar
- 6 tablespoons melted butter
- Cheesecake:
- 4 pkg. (8oz) Cream Cheese softened
- 3 eggs
- 1 1/2 cup sugar
- 3 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla
- 3 eggs
- 1 pint sour cream
- 2 cups frozen strawberries in their juice defrosted
- Cool Whip

Step 1
Heat oven to 325. Combine cookie crumbs ,1/4 cup sugar and 6 tablespoons melted butter
mix well. Press into bottom and sides of a 9 inch springform. Bake at 350 preheated oven for 5 minutes.
Beat softened cream cheese with mixmaster 1 t0 2 minutes until smooth. Add 1 egg at a time, beating till smooth.
Continue mixing and add vanilla and 1 1/2 cups sugar, sour cream, lemon juice and rind. Pour into crust and bake at 350 for 45 minutes. Cool completely and then refrigerate for 4 hours. Serve with strawberries and cool whip.
