Ingredients

  • 4 TBSP Butter, softened
  • 2 8oz packages of cream cheese, softened (can use reduced fat)
  • 2 1/2 cups sugar
  • 2 TBSP corn starch
  • 4 eggs
  • 1/4 c plus 1 1/3 c milk
  • 2 tsp vanilla extract
  • 2 c sifted flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 c butter, softened
  • 4 squares unsweetened baking chocolate melted and cooled

Step 1

Pre-heat oven to 350 degrees.

Cream 4 TBSP butter with cream cheese, 1/2 cup sugar, and cornstarch. Add 2 eggs, 1/4 c milk, and 1 tsp vanilla extract. Beat at high speed of mixer until smooth and creamy.

Grease and flour bottom of 9x13 pan.

Combine flour with 2 c sugar, salt, baking powder, and baking soda in a large mixing bowl. Add 1/2 c butter and 1 c milk. Blend well at low speed. Beat 1 1/2 minutes at low speed or 225 strokes by hand. Add 1/3 cup milk, 2 eggs, melted and cooled chocolate, and 1 tsp vanilla extract. Beat 1 1/2 minutes at low speed.

Spread half of batter in bottom of pan. Spoon cheese mixture over batter spreading carefully to cover. Top with remaining batter. Bake at 350 degrees for 50 to 60 minutes until cake springs back when touched lightly in center, or knife inserted into middle of cake comes out clean. Cool. Refrigerate if desired.
