Ingredients
- 1 lb bacon, cooked and crumbled
- 1 large shallot, sliced 1/8 inch thick rings
- 1/4 cup red wine vinegar
- 6 oz. crumbled blue or gorgonzola cheese
- 1/3 cup mayonnaise
- 1/4 cup sour cream
- 3 Tbsp. milk
- 1 clove garlic, minced
- 1/4 tsp. salt and pepper
- 2 heads of iceberg lettucevcored and cut into 6 wedges
- 3 tomatoes, chopped or cherry tomatoes halved
- and more if desired to crumble over salad
- 1 T. lemon juice
- 2 T. fresh chives, chopped
- 1/4 cup olive oil
- salt and pepper

Preparation
Step 1
Cook bacon in 10 inch skillet until crispy. Transfer to paper towel lined plate.
Combine Shallot and vinegar in bowl and let sit for 20 min.
Using fork, remove shallot from vinegar; reserve shallot and 2 tbsp. vinegar. Whisk 3 ounces blue cheese, mayonnaise, sour cream, milk, reservd vinegar, garlic, salt and pepper togethere in bowl until combined.
Arrange lettuce wedges on platter and top with dressing, reserved shallot, and tomatoes. Crumble bacon over top and sprinkle with remaining 1 ounce blue cheese. Serve.
