Ingredients

  • Dough:
  • 1 cup Mashed Potatoes
  • 1/4 cup Oil
  • 1 tsp Salt
  • 3 cups Flour
  • 1 tsp Baking Powder
  • 1/2 cup Cold Water
  • Potato Filling:
  • 1/2 cup Onions
  • 1 1/2 cups Mashed Potatoes
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • Meat Filling:
  • 1 lrg Onion, chopped
  • 2 lbs Ground Meat
  • 1/2 lb Pastrami
  • 1 1/2 cups Mashed Potatoes
  • 1/4 tsp Pepper
  • 1 tsp Salt
  • 3/4 tsp Garlic Powder

Preparation

Step 1

Dough:
Combine potatoes oil and salt. Make sure it is fully smooth. Add flour and baking powder. Mix well. Make a well in the center and pour in water.
Knead into a smooth dough. Let rest, covered with a bowl or cloth for 1/2 hour.
Preheat oven to 350.

Potato Filling:
Saute onion in oil.
Combine all ingredients and mix well.

Meat Filling:
Saute onion until soft. Add meat and brown.
Chop the pastrami and add. Strain out the fat.
Using a food processor or blender blend until mix but not too fine.
Add mashed potatoes. Mix well.

Cut dough into 4 sections. Roll each into an 11x6" rectangle.
Place filling n the middle horizontally, leaving 1/2" edge on each end. Roll up the sides keeping it long horizontally and then pinch the ends closed.

For individual knishes cut 3-4" squares and fold 2 opposite sides towards the middle and then the other 2 sides towards the middle.
Egg and bake 40-45 minutes until golden.
