Ingredients
- 3 pound top round roast (I used boneless)
- 1 envelope Italian dressing seasoning mix
- 1 jar (16 oz) mild pepper rings (don't drain)
- giardiniera and french rolls, for serving

Preparation
Step 1
In a large slow cooker, place roast in (I like to put the side with the fat up, but you can also trim the fat if you prefer).
Sprinkle the italian dressing seasoning mix over the top of the roast.
Pour the whole jar of pepper rings with juice over the roast.
Cover crock pot and cook on low for 6-8 hours.
When ready to serve, use two forks and shred beef, or place on a cutting board and slice the beef thin. Serve on a french roll with giardiniera. ENJOY
