Ingredients
- 1 tbsp, plus 1 tsp canola oil
- 2 medium chopped red onions
- 1 large red or yellow pepper
- 3 large cloves garlic
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1/2 tsp fresh thyme
- 1 1/2 lbs lean ground beef
- 1 1/2 cups canned tomato sauce
- 1 cup full bodied beer
- 1 tbsp Worcestershire sauce
- 1 sliced green onion
- 4 pieces French or Italian bread

Step 1
In a large skillet, preferable non-stick, heat 1 tbsp of the oil. Add the onions, red pepper, garlic, salt, black pepper and thyme. Cook over moderate heat, stirring occasionally, until the vegetables are softened but not browned, about 10 minutes. Transfer the vegetables to a plate.
Add the remaining 1 tsp of oil to the skillet and increase the heat to moderately high. Add the ground beef and cook, breaking up the meat with a wooden spoon, until browned in some spots and still partly rare in others, about 4 minutes.
Return the vegetables to the skillet, stir in the tomato sauce, beer, Worcestershire and hot pepper sauce and bring to a simmer. Reduce the heat to low and cook, partially covered, until the mixture has thickened slightly, about 15 minutes. Turn off the heat and stir in the green onions.
The recipe can be prepared to this point a day ahead. Refrigerate, covered, and reheat before proceeding. Preheat the broiler. Place the bread cut side up on a baking sheet and toast about 4" from the heat until golden brown, about 30 seconds. Place the toast on serving plates and spoon the meat mixture on top. Serve with a green salad or raw vegetables and dip.
