Ingredients

  • Meatballs:
  • 1.5 lb chicken breasts (ground)
  • 1 egg
  • 1/2 cup grated Parmesan
  • 1/2 cup Italian breadcrumbs
  • 1 TBS dried parsley
  • 1 TBS olive oil
  • Sauce:
  • 2 TBS olive oil
  • 1/2 cup (3 oz) yellow onion (diced)
  • 1/2 cup (3 oz) green bell pepper (diced)
  • 1 tsp minced garlic
  • 28 oz can crushed tomatoes
  • 1/4 cup red wine
  • 1 TBS dried parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

Step 1

In saucepan, heat 2 TBS olive oil. Saute onion, bell pepper, and garlic until soft. Stir in crushed tomatoes. Use red wine to rinse the can, then pour into saucepan. Stir in parsley, basil, oregano, sugar, salt, and black pepper. Simmer on low until ready to use

In large mixing bowl, mix ground chicken, egg, Parmesan, breadcrumbs, parsley, and olive oil. Roll into 12 meatballs. Smash them a little to make them oval. Bake meatballs at 425 degrees for 15 minutes. Place meatballs into sauce.

Serve meatballs and sauce over angel hair pasta or on hoagie rolls with sliced provolone for meatball subs.
