Ingredients

  • Sauce:
  • 3-4 lbs white fish (cod or red snapper are best)
  • 5 large onions
  • 1 large can of tomatoes (put in blender or crush by hand)
  • 1 large can (202 size) tomato puree
  • Salt to taste
  • Sugar
  • 3 T mint
  • 2-3 handfuls of currants

Preparation

Step 1

Flour fish and brown in oven.

Brown onions in olive oil.
Add tomatoes, tomato puree, salt, sugar, and mint.
Cook uncovered for ~ 1hr.
Add currants and cook for ~ 15 minutes longer.

Put fish in CLEAN PAN with a little oil rubbed on bottom of pan.
Add sauce and bake in 325 oven for ~ 35 minutes.

Can be served hot or cold.
