Ingredients

  • 2 Ears of corn, husk and silk removed.
  • 1 Red Onion, small dice
  • 1 Yellow bell pepper, small dice
  • 1 Clove garlic, minced
  • 1 Jalapeno, small dice
  • 1/4 cup Cilantro, chopped
  • Juice of 2 small limes
  • 1 Tablespoon of Sugar
  • 1 Teaspoon of Salt

Preparation

Step 1

• Heat grill until very hot.
• Rub corn with olive oil and place on hot grill.
• Char corn until brown in spots all over.
• Remove corn from grill, let cool and cut kernels off cob.
• Mix all ingredients in a large bowl.
• Adjust Sugar, Salt, and Lime depending on sweetness of fruit.
