- 1200 g water
- 600 g glucose
- 48 gelatin leaves
- 4 K chocolate
- 8 K heavy cream

Step 1
Boil water and glucose.
Bloom gelatin and add to water
Pour water mixture over chocolate and mix to melt
Whip cream to soft peaks and fold chocolate into cream.
