Ingredients
- 4 # semi-sweet chocolate
- 2 # butter
- 2 # 3 oz sugared yolks
- 9 oz sugar
- 2 # pasteurized egg whites
- 12 oz sugar
- 6 oz espresso flavoring
- 1 c rum
- 2 qt heavy cream

Preparation
Step 1
Melt chocolate and butter together.
Whisk yolks and sugar on speed 3 until pale
Whip egg whites and sugar to medium peaks
Combine rum and espresso flavoring
Whip cream to soft peaks
Fold espresso mix into yolks after whipped. Fold chocolate into yolks, fold in whites, then fold in cream.
Put in pan and fridge to set.
