STRAWBERRY ICING

Ingredients
- 1 cup fresh strawberries
- 1 cup butter
- 1 cup icing sugar
- 1 tsp vanilla
- 2 1/2 cups icing sugar
- 3 tbsp whipping cream

Preparation
Step 1
Puree strawberries till smooth. Transfer to a pan and bring to a boil, stirring often until reduced by at least half (about 10-15 minutes)
Cool
Beat butter in mixer till light and fluffy. Add 1 cup icing sugar just till blended. Add 2 tbsp puree and vanilla till blended. Repeat with 2 tbsp puree and 1 cup sugar till gone.
Add whipping cream at the end and beat till fluffy.
The adding of the puree slowly with the icing sugar is the secret !!
