Green Gumbo with Smoked Sausage

This traditional green gumbo is often prepared during Lent. To make it totally vegetarian, simply eliminate the sausage and substitute vegetable broth for the chicken broth. For a shortcut version, substitute 3 to 4 (10-ounce) packages of frozen greens, thawed and drained, and reduce cooking time to 20 minutes, or until greens are tender.

Ingredients

  • 1/4 cup vegetable oil
  • 1/3 cup flour
  • 1 1/2 cups diced onion
  • 3/4 cup diced celery
  • 3/4 cup diced green bell pepper
  • 1 tablespoon minced garlic
  • 1 to 2 tablespoons Cajun seasoning, or to taste
  • 6 cups chicken broth
  • 2 1/2 pounds washed and trimmed greens, such as collards, mustard greens, kale, chard or spinach, chopped
  • 2/3 pound andouille sausage, sliced
  • 1 to 2 tablespoons cider vinegar
  • 1/2 cup minced scallion

Step 1

Stir together oil and flour in a large casserole, set over medium heat. Cook, stirring, until flour mixture is brown, about 5 to 7 minutes.

Add onion, celery, green pepper, garlic and Cajun seasoning. Cook, stirring, 5 minutes, or until softened.

Add chicken broth. Bring to boil, stirring.

Add greens; stir until wilted. Simmer 45 minutes, or until tender.

Add sausage; simmer 15 minutes. Stir in vinegar. Garnish with scallion.
