freeze uncooked on cookie sheet a couple of hours

put in zip lock bag

freeze again
take out just what you want to cook
cook @ 350 for 20-25 min

Ingredients

  • tapioca flour - 4 glasses
  • parmesan - grated - 2 glasses
  • water - 1 glass
  • milk - 1 glass
  • corn oil - 1/2 glass
  • 1 TBL butter
  • 1 TBL salt
  • 5 eggs (maybe 1/2 egg more)
  • cotija - mexican cheese - sm. amt

Step 1

Instructions:
sauce pan & boil:
water, milk, corn oil, butter & salt

add milk mix to tapioca flour - a little at a time
not too moist (might have a little liquid mix left over)
will be very sticky & elastisity

add egg to flour mix - a little at a time
mix w/ hands

add parmesan & mexican cheese

grease - oil casserole dish, or sheet pan to put rolled balls in

can refrig - 1 hr before rolling - might make it easier & less sticky
grease top of mix

grease hands (heavily) w/ oil before making each ball

cook 350 20-25 min

grease hands heavily w/ oil
