Pork Chops with Apple Hash

Ingredients
- Hash:
- 2 thick pork loin chops
- S&P, to taste
- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 1 cup hard cider or apple juice
- ice cubes
- 1 apple, peeled and cubed into 1" cubes
- 2 carrots, peeled and chopped into small pieces
- 1 parsnip, peeled and chopped into small pieces
- 1 shallot, peeled and chopped finely

Step 1
Brining:
Take a large ziploc bag and add cider, salt and sugar. Add pork chops and several ice cubes and close. Place in a bowl and refrigerate for 2 hours.
When the brining is nearly finished, preheat oven to 400 degrees.
Chop up ingredients for the hash. Heat up a stainless steel or iron skillet with oil. When hot, place pork chops on pan and cook for 5 minutes. DON'T MOVE IT. Flip over. Turn off heat and move skillet into the oven and bake for 15-20 minutes.
While pork chops are baking, boil carrots and parsnips in a pot of water, about 10 minutes.
When carrots are done, heat up a skillet with oil. Add apple and shallots and saute for about 3 mintues. Add the carrots and parsnips at the end and saute for 1 more minute.
Pork chops are done when thermometer reads 145 degrees. Serve with the apple hash.
