Chicken Parmesan

Ingredients
- 4 boneless, skinless chicken breasts
- 1-1/2 bread crumbs mixed w/ 1 tsp, Tuscan Sunset, Italian Herb or Pasta Sprinkle
- 1/2 C grated parmesan cheese, divided
- 1 TBL turkish oregano
- 1 TBL CA basil
- 1/2 tsp cayenne pepper
- 1/2 C flour
- 2 eggs, lightly beaten
- 3 TBL olive oil
- 1 16 oz jar marinara sauce, divided (or
- 15 -oz can tomato sauce plus 1 tsp tuscan sunset, italian herb, or pasta sprinkle)
- 1-1/2 C grated mozzarella cheese
- 8 oz dry pasta

Preparation
Step 1
preheat oven to 375
place chicken breasts btwn 2 pieces waxed paper & pound until are abt. 1/2" thick
in wide, shallow bowl, combine bread crumbs, herb blend of your choice, 1/4 C parmesan cheese, oregano, basil & cayenne pepper
lightly coat each chicken breast w/ flour, shaking off excess
dip chicken in eggs
dip in bread crumbs, making sure to evenly coat both sides
heat oil in roomy frying pan over med heat carefully add chicken to pan
cook until golden brown on each side
spread 1 C of marinara sauce or seasoned tomato sauce in bottom of glass baking dish
place chicken in dish & top w/ remaining marinara sauce
sprinkle w/ mozzarella cheese & remaining parmesan cheese
bake @ 375 for 20 min or until cheese is bubbly
while chicken is baking, cook pasta according to pkg. dir.
serve chicken over pasta
