Ingredients

  • 1 C old fashioned oats (not instant)
  • 1 C buttermilk
  • 1/4 C butter (1/2 stick)
  • 1/4 C brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 C flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1-3 TBL cinnamon sugar

Preparation

Step 1

preheat oven to 400
combine oats & buttermilk in bowl
let stand for 10 min

in lg. mixing bowl, cream togeth butter, brown sugar, egg & vanilla
add oat mixture
stir to blend
add flour, baking powder, salt & baking soda
mix well

spoon batter into well greased muffin pan, filling abt. 2/3 full
sprinkle each muffin generously w/ cinnamon sugar (this will make a crusty layer on top)

bake @ 400 for 20-25 min
let cool abt. 5 min
carefully remove muffins by grabbing each one w/ tongs or fork & lifting them out

don't turn pan over or cinnamon sugar will fall off
let cool
