Ingredients
- 1 TBL vegie oil
- 2 LBS beef sirloin, cut into 1" cubes
- 1 lg. onion, coarsely chopped
- 1 med green bell pepper, chopped
- 1 15.5-oz can pinto beans, drained & rinsed
- 1 15.5-oz can kidney beans, drained & rinsed
- 1 15.5-oz can black beans, drained & rinsed
- 2 TBL reg. chili powder
- 3 TBL grd cumin
- 2 28-oz cans diced tomatoes, not drained

Preparation
Step 1
in lg dutch oven or stockpot, heat oil over med n=high heat
add 1/2 of beef & cook, stirring occasionally, until nicely browned
place browned beef in bowl & repeat w/ rest of beef
add onion & bell pepper to pot & cook for 2-3 min, stirring occasionally, until veggies are crisp-tender
stir in beans, chili powder, cumin & diced tomatoes
cover & cook over med heat for 10 min
add beef & cook uncovered, until beef is tender & heated through, abt. 5-8 min
serve in lg. bowls w/ topping of choice
