Ingredients

  • optional:
  • 2-1/2 C chicken, cooked, shredded
  • 2 TBL vegie oil
  • 1/2 C chopped onion (1sm)
  • 2 garlic cloves, minced
  • 4 -oz can chopped mild green chilies
  • 1 tsp med hot chili powder
  • 16 oz salsa
  • 1/4 C chopped fresh cilantro leaves
  • 1-1/2 tsp grd cumin
  • salt to taste
  • 6 10" flour tortillas or 12 6" tortillas
  • 1 C canned refried beans
  • 2-4 TBL vegie oil for basting
  • sour cream
  • guacamole
  • tomatoes

Preparation

Step 1

preheat oven to 425

in lg saucepan, heat oil over med heat
add onion & garlic
cook until tender

stir in green chilies, chili powder, salsa, cilantro, cumin & salt

stir in shredded chicken
let cool

grease rimmed 15X10X1" baking pan w/ 2 TBL oil

working w/ one tortilla at a time, spoon heaping TBL of beans down center of each tortilla
top w/ scant 1/2 C chicken mix.
fold up bottom, top & sides of tortilla
roll up as though making burrito & secure w/ wooden toothpicks of necessary

place chimichangas in baking pan, seam side down
brush all sides w/ oil
bake @ 425 for 20-25 min or until golden brown & crisp, turning at least once.

serve w/ sour cream, guacamole & tomatoes if desired
