Chile & Lime Scallops Spaghetti 1 Picture

Ingredients

  • 8-12 scallops, depending on the size
  • 1 tbsp olive oil +1/2 tsp butter
  • 2 large garlic cloves, chopped
  • 1 red chile, chopped
  • Juice of one lime
  • 1/2 tsp sugar
  • Salt & pepper
  • Spaghetti, enough for two people
  • Chopped coriander, optional

Preparation

Step 1

Heat non stick pan until hot and add butter and olive oil.

Once scallops are flipped, add garlic and chile.

Cook for about a minute then add the lime juice and sugar. Add the spaghetti into the pan and toss until well mixed.

This is a delicious blend of flavors, the tart lime and hot chile does make for some great tasting scallops!

I would add some cheese (I'm a cheese fan ;-)
