Ingredients

  • DRESSING:
  • 1 10-12" baguette
  • 3 slices provolone cheese
  • 2 cups fresh torn spinach
  • 1 can tuna in water, canned
  • 2 large plum tomatoes -- thinly sliced
  • 3 radishes -- sliced
  • 6 black kalmata olives -- sliced
  • fresh ground pepper
  • 1 clove garlic
  • 1 cup fresh basil
  • 1/4 cup olive oil
  • 1 teaspoon capers
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons dijon mustard
  • Process all dressing ingredients in food processor fitted with metal blade. Set aside.

Preparation

Step 1



Cut bread horizontally. Hollow out top and bottom leaving 1/2 inch shell. Spread dressing over inside top and bottom of bread.
Layer cheese, spinach, tuna, tomato, radishes and olives.
Sprinkle with pepper.
Put top piece of bread on sandwich.
Wrap in plastic wrap and place on baking sheet. Top with another baking sheet and weigh down with heavy cans for about an hour.
