Ingredients
- 2 tablespoons all purpose flour
- 2 tablespoons olive oil
- 1 pound beef sirloin -- , 1/2 " thick, cut into bite-sized pieces
- 2 tablespoons flour
- 1 tablespoon mild Hungarian paprika
- coarse salt and black pepper to taste
- 1/2 cup dry sherry
- 1 cup beef broth
- 1/2 cup sour cream
- butter
- chopped parsley for garnish

Preparation
Step 1
Mix flour, paprika, salt & pepper on a plate and turn meat in mixture to coat evenly.
Heat a skillet over med-high heat and add oil. When oil is hot, brown meat for 5 to 6 minutes. Add sherry and scrape up pan drippings. Reduce sherry for 2 to 3 minutes, add beef broth, then thicken sauce with sour cream and remove from heat.
Serve meat over egg noodles or spaetzel tossed with a touch of butter. Garnish with finely chopped gherkin pickles or parsley
