Ingredients

  • 8 oz whole wheat linguini
  • 1 carrot, cut into matchstick thin strips
  • 1 red bell pepper, cut into thin strips
  • 3/4 lb asparagus spears, cut into 2" pieces
  • 1/3 cup fat free half and half
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup chopped flat leaf parsley
  • 2 tsp grated lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

Step 1

Fill a large pot 2/3 full with water, adding salt if desired, bring to a boil. Stir in linguini. Cook according to the time directed on pkg, adding carrots during the last 4 min of cooking and adding the pepper and asparagus the last 2 min of cooking.

Drain and transfer to a large bowl. Meanwhile, heat half and half in a small saucepan over low heat until warm (do not boil). Add half and half and grated cheese to pasta mixture with last 4 ingredients as well. Serve at once.
