BEEF STIR-FRY WITH TOMATOES

Ingredients
- 1 lb sirloin steak
- 3 tbsp soya sauce
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 2 tbsp cornstarch
- 2 cups fresh mushrooms, sliced
- 1/2 green pepper, cubed
- 2 medium tomatoes,cubed
- 1 medium onion, thinly sliced

Step 1
Cut steak across the grain in 1" x 1/4" strips, about 2-3" long. Mix together soya sauce, vinegar and brown sugar. Pour mixture over beef and mix lightly to coat evenly. Cover and refrigerate overnight. When ready to cook, pour off marinade and add cornstarch. Pour cornstarch mixture over beef. Set aside. Stir fry onions, peppers and mushrooms in 1 tbsp hot oil for about 1 minute. Add beef mixture and cook for about 3 minutes, until sauce thickens. Add cut tomatoes and cook until heated. Serve over a bed of rice.
