Ingredients
- 1 lb ground meat
- 3/4 c chopped onion
- 3/4 c carrots
- 4 Tbs butter – divided
- 3 C chicken Broth
- 4 C potatoes (peeled and diced) or cheat and use cubed frozen hashbrowns
- 1/4 c flour
- 8 oz American cheese
- 1/2 c milk
- 1/4 c sour crème

Preparation
Step 1
Brown meat, drain, In same pan, add 1 tbs butter and sauté onions & carrots for 10 minutes until tender.
Add chicken broth and potatoes to meat mixture and bring to a boil.
Reduce heat and simmer 10/12 mins until potatoes are tender.
In small skillet, melt remaining 3 Tbs butter, add flour and cook until bubbly
Add to soup, bring to boil
Add cheese & milk and cook until melted.
Add sour cream
Top with a dollop of sour cream and some shredded cheese
