Ingredients
- 1 lb. dried pinto beans (2 cups)
- 1 can (14.5) diced tomatoes
- 1 medium red onion, diced
- 1 cup seeded and diced poblano chile peppers
- 1 cup diced red bell pepper
- 1/2 lb. ground beef sirloin
- 1 strip bacon
- 2 cloves garlic, minced
- 1 tea. chili powder
- 1 1/4 cups bbq sauce, divided
- salt and pepper to taste

Step 1
Soak beans according to package directions; drain and rinse.
Combine beans, tomatoes, onion, poblanos, bell pepper, sirloin, bacon, garlic, chili powder, and 1/4 cup bbq sauce in a 3-4 qt. slow cooker. Cover; cook until beans are tender, on high 4-6 hours, on low 10-12 hours. Remove bacon before serving beans.
Stir in the remaining 1 cup bbq sauce into beans; season with salt and pepper.
