Chipotle Maple Black Beans

Ingredients

  • 1 cup onion, diced
  • 1 T vegetable oil
  • 1 t minced garlic
  • 2 T apple cider
  • 2 cans black beans (15 oz), rinsed, drained
  • 1/2 cup maple syrup
  • 1/2 cup ketchup
  • 2 T chipotles in adobo sauce, minced
  • 1 t dry mustard
  • 1 t Worcestershire sauce
  • Salt to taste

Preparation

Step 1

Saute onion in oil in a large saute pan over medium heat until softened, about 3 minutes. Stir in garlic and cook 1 minute. Deglaze with vinegar and bring to a boil. Add remaining ingredients and simmer 10 minutes.
