Ingredients

  • 1 fresh pineapple, cut up (with juice) or 1 20oz can pineapple chunks(with juice)
  • 1 oranges, peeled and sectioned
  • 1/2 cup sugar
  • 6 cups cut-up fresh fruit (strawberries,melon,peaches,grapes,bananas) we like 3 apples and 4 bananas
  • 2 T cornstarch
  • Juice of 1 lemon

Preparation

Step 1

The night before, combine pineapple, juice,oranges and sugar. Cover and let stand in refrigerator overnight.
Drain off juice and add water to make one cup. Blend liquid into cornstarch; add lemon juice. Heat to boiling. When cool, mix with orange-pineapple mixture and remaining fruit. Cover until serving time.
For a winter salad, fix pineapple and oranges as above and substitute apples and bananas for summer fruit.
