Red Clam sauce with Arugula

Ingredients

  • 1/2 c. olive oil
  • 2 large garlic cloves, crushed
  • Parsley, do not brown
  • oregano to taste
  • 3-4 tomatoes
  • 2 cans clams--chopped
  • 1 George Washington seasoning packet
  • 2 cups arugula, approximately.

Preparation

Step 1

Heat the oil and add garlic and parsley. sauté until soft.
Add the tomatoes, sprinkle with oregano. Cook 5 minutes. Add clams, G.W. packet and arugula---about 2 cups.
simmer for 10 minutes
