Ingredients
- 2 heaping tbsp almond flour (16 g/ 0.6 oz)
- 1 heaping tbsp coconut flour (12 g/ 0.4 oz)
- 1/8 tsp baking soda
- 1 tbsp Erythritol or Swerve (10 g/ 0.4 oz)
- 1 large egg, free-range or organic
- 1/2 tsp sugar-free vanilla extract (you can make your own)
- 1 tbsp extra virgin coconut oil or butter, melted
- 3-5 drops liquid stevia (I used berry stevia drops from SweetLeaf)
- a few berries - can be mixed, fresh or frozen (20 g/ 0.7 oz)
- Optional: 2 tbsp whipped or pouring heavy cream, coconut milk or full-fat yogurt

Preparation

4. Microwave on high for 60-90 seconds. Optionally, serve with cream or coconut milk. Tips for cooking in the oven: If you don't have a
microwave, I suggest you make 4-8 servings at once. Preheat the oven to 175 °C/ 350 °F and cook for about 12-15 minutes or until cooked in the centre.
