Ingredients

  • Creme Brulee
  • 2 cups heavy cream
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/2 ripe banana (pureed)
  • 1 shot Baileys Irish Cream
  • Caramelized Bananas
  • 2 Tablespoons butter
  • 2 Tablespoons sugar
  • 6 small bananas
  • Garnish
  • 1/4 cup brown sugar
  • 6 sugar moons (purchased)
  • 1 cup assorted berries
  • mint leaves

Preparation

Step 1

Preheat oven to 350° F
In sauce pan over medium heat, slowly bring cream to a boil

In a mixing bowl, combine egg yolks and sugar and beat until mixture is lemon colored. Place over simmering water and beat until mixture has doubled in volume, about 10 minutes

Remove from heat and keep whisking to cool down.

Slowly stir hot cream and Bailey into egg mixture. Using fine sieve, strain into a bowl set over ice to quickly chill the mixture. Add pureed banana and mix well.

Pour mixture into ramekins set in 9x13 pan. Pour hot water into the pan until it is about 1/2 way up molds. Bake 40 minutes.

Caramelized Bananas
Melt butter and sugar in small saute pan over medium heat. Add bananas and caramelize on all sides for a total of 2 minutes. Do not brown.

Evenly sprinkle top with brown sugar and place under broiler or use a pastry blow torch to heat sugar until it turns brown and bubbles.

Let set for a few minutes, then garnish with caramelized bananas, sugar moons, berries and mint.
