Ingredients

  • 1 (3 to 4-pound) whole chicken, cut into pieces
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 egg
  • Butter/flour roux, 50/50
  • Salt and freshly ground black pepper

Preparation

Step 1

In a large pot, cover chicken with water, add salt and pepper. Bring to a boil and let simmer for about 40 minutes until cooked through. Let cool and remove chicken from bones.

Once the chicken is cooked, in a mixing bowl, add flour, salt, and baking powder and mix well. Add milk and egg and combine well with a fork. Drop into boiling chicken broth and simmer, covered, for 10 to 15 minutes. Add a butter/flour roux to thicken the broth. Add salt and pepper, to taste. Serve chicken "n" dumplings covered with gravy.
