- 3 diced ripe mangoes
- 1 can black beans, drained and rinsed
- 1/2 cup each diced red, yellow, orange peppers
- 1 small jalapeno (opt)
- 1/2 red onion, diced
- 3-4 roma tomatoes, diced
- 2-3 garlic cloves, finely chopped
- 1/2 bunch cilantro or parsley, finely chopped
- 2 TB lime juice
- 1 TB red wine vinegar
- 2 tsp olive oil
- salt/pepper to taste
