Ingredients
- 1 Tbsp butter
- 1 cup finely chopped onion
- 2/3 cup finely chopped celery
- 3/4 tsp pepper
- 1/4 tsp salt
- 3 (8 ounce) packages pre sliced mushrooms
- 1/2 cup dry sherry
- 2/3 cup flour
- 3 can fat free chicken broth
- 2-1/4 cup grated parmesan cheese
- 1/2 cup cream cheese
- 7 cups hot cooked vermicelli
- 4 cups chopped cooked chicken breast
- 1 slice white bread

Step 1
1. Preheat oven to 350
2. Melt butter in large stockpot over medium heat. Add Saute first 6 ingredients for 4 minutes till soft. Add sherry and cook 1 minute.
3.Gradually add flour to pan and cook 3 min constantly with a whisk. Gradually add broth stirring constantly. Bring to a boil. Reduce heat,simmer 5 minutes stirring frequently. Remove from heat
4.Add 1-3/4 cup parmesan cheese and cream cheese stir until cheese melts.
Add pasta and chicken, stir until blended. Divide pasta mixture between 2-8 inch glass or ceramic baking dishes coated with cooking spray
5. Place bread in food processor, pulse 10 times or until coarse crumbs form
Combine breadcrumbs and 1/2 cup parmesan cheese, sprinkle evenly over past
6. Bake at 350 for 30 minutes. Remove and let stand 15 minutes
