Ingredients

  • 1 1/2 lbs. boneless, skinless chicken breasts
  • 2 cups buttermilk
  • 3/4 cup bread crumbs
  • 1/2 cup grated parmesan
  • 1 Tbsp. dried Italian herb blend
  • 1 tsp. red pepper flakes
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 eggs

Step 1

Cut the chicken into 1/2" pieces. In a large bowl toss with the buttermilk. Marinate for 30 minutes Combine breadcrumbs with the rest of the ingredients.
Beat the eggs in a small bowl. Drain the chicken. Roll pieces in egg, coast with the breadcrumb mixture, shaking off excess. Place on a greased baking sheet. Bake at 350 until coating is golden brown and chicken is cooked through--about 30 minutes.
These are great hot or cold--or even room temperature for a picnic.
